Greek lamb recipe!

Here is a delicious simple Greek dish that is easy to cook and tastes fab!

Ingredients

  • 1 tbsp dried oregano
  • 400g lamb (diced)
  • 1 large clove garlic crushed
  • 2 tins of chopped tomato
  • 300ml hot vegetable stock
  • 1 tbsp caster sugar
  • 150g Orzo
  • 400g tin of chick peas
  • 1 lemon grated zest
  • 100g spinach
  • 75g feta crumbled

Method

  • Pan fry lamb, cumin, oregano for 5 minutes
  • Add garlic for 1 minute.
  • Add tomatoes, vegetable stock, sugar then bring to boil.
  • Stir through orzo, bubble for 10 minutes.
  • Stir through chick peas, lemon zest and spinach until spinach has wilted.
  • Crumble feta on top.
  • Serve with warm pitta bread.

Tom is very fussy so for him I took a spoon full out of the pan before adding chick peas and spinach. He enjoyed adding a pinch of lemon zest and crumbing on top a little feta and stirring it through, then he actually ate it! Whoop!
